Ingredients
The peak season for zucchini is June through late August.
What You Need :
- 12 tomatoes
- 1 large sweet onion
- 8 medium zucchini
- 1 medium eggplant
- 1 stalk celery
- 1/3 c. olive oil
- 2 t. Himalayan sea salt
- 1 T. celery seed
- 1 t. black pepper
- 1/4 c. fresh parsley
- 1/4 c. fresh basil
Instructions
- Preheat oven to 450 degrees.
- Cut the tomatoes into bite-size chunks.
- Cut the onion in half and then into thin slices.
- Slice the zucchini and celery into 1/2 inch slices.
- Toss all of the vegetables together in a large bowl.
- Add the next four ingredients.
- Finely chop the parsley and basil.
- Toss the herbs with all other ingredients.
- Transfer all to a glass baking dish and cover.
- Bake for 30 minutes, or until vegetables have reached desired tenderness.
