Summer Seasonal Eating offers many wonderful eating options.

With the change in seasons comes not only a change in weather but a change in the way you eat.

Summer fruits and vegetables start to come to the forefront of your diet. The staple soups and stews are put away until the colder months return. If you are feeling ready to embrace the summer menu then here is some summer food inspiration to see you through the Summer and beyond.

Watermelon Ideas

Salad is a summer staple but if you are bored of the same old lettuce and cucumber and tomato salad then why not try this delicious and refreshing halloumi and watermelon salad.

The sweetness of the watermelon creates a match made in heaven when teamed up with warm slightly salty halloumi. Add a few nuts, some mint, chilies, and peppers to your salad and drizzle with balsamic vinegar glaze. It is a perfectly refreshing summer salad that tastes great and helps keep you hydrated.

Summer Fruit

There is nothing better than using freshly picked produce in a pie and summer is the perfect time to do this.

Blackberries are some of the most common summer berries and make for the perfect pie.

Follow this simple fresh blackberry pie recipe to bring a taste of summer sweetness to your kitchen. Serve up your blackberry pie with a dollop of vanilla ice cream and enjoy under the summer sun.

Are you looking for a healthier option? Try this!

Iced coffee

Why not replace your daily hot coffee with the iced version. It will have the same effect, taste just as good, and help keep you cool in the process. You can buy your favorite latte from your favorite coffee shop ‘iced’ or make your own.

To make your own iced coffee simply add ice, water, coffee granules (and milk and sugar depending on your taste) into a blender and pulse to the consistency of your choosing. Simple yet effective.

Do you want to kick the health factor up a notch? Make it a Chagga-chino.

Pasta salad

A delicious pasta salad is a great option when you fancy something a little more substantial than a regular salad but still want the refreshing feel of summer.

Pasta can be the perfect summer dish when served cold and is great for batch cooking.

It is also perfect for barbeques and parties. Pasta salad fillings can include, sweetcorn, onions, tuna, chicken, chorizo sausage, prawns, you name it it all works perfectly in a cool pasta salad.

Corn on the cob

Corn on the cob is an ever-popular summer side dish that makes a return year on year. It is delicious boiled, grilled on the barbecue, or cooked in the Sous Vide.

Corn goes with almost any summer dish. Not to mention it provides a number of health benefits by adding vitamins and minerals to your diet.

Guacamole

Another great summer side dish that is the perfect addition to salads, tacos, or toast. Alternatively, serve it as a dip or condiment. Guacamole is best made from scratch and uses avocados and fresh tomatoes.

My son shows you how to make it in this video.

It is packed with fresh summer food bursting with goodness and nutrients to top up your diet.
