Your Healthy Blueberry Muffin Recipe

I hope that you will enjoy this Healthy and Easy Blueberry Muffin Recipe.

This Blueberry Muffin Recipe makes 6 servings.

Hint, I like to double the recipe. It takes little extra effort and provides extra muffins for the freezer. These are great for later use.

Ingredients:

  • 1 cup almond meal
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla extract (no sugar/organic)
  • 1 tbs honey (small trace in each muffin)
  • 4 eggs
  • 1 cup blueberries*
  • Flax Meal

*Fresh or frozen blueberries may be used. If you use frozen blueberries in your blueberry muffin recipe make sure to thoroughly defrost. In addition, check the ingredients to be certain that there is no added sugar.

Directions:

  1. Preheat oven to 350.
  2. Line a six cupcake pan with aluminum cupcake cups.
  3. Spray with olive oil.
  4. Mix almond meal, baking powder, and cinnamon together in one bowl (mix well so no lumps in baking powder).
  5. In another bowl scramble vanilla and honey into the eggs.
  6. Add wet ingredients to dry ingredients well.
  7. Add blueberries and then divide into the six cups.
  8. Sprinkle top of each muffin with Flax meal.
  9. Bake for approx 25-30 minutes until toothpick comes out somewhat clean.
  10. Let cool and store leftovers in the refrigerator.

There are so many wonderful and healthy ingredients in this Blueberry Muffin Recipe.

Flaxseed is high in Omega 3’s and fiber and offers many health benefits. These benefits have been known to include relief from constipation, improvement of digestive health, and lowering of cholesterol.

Almond meal is simply ground up almonds and provides protein, manganese and vitamin e. Manganese ensures healthy bone structure, helps regulate blood sugar and assists the thyroid. A properly functioning thyroid will help to regulate your weight, energy and skin health. Your hormones are responsible for your mood and sexual function, among other things.

Eggs provide protein and help to prevent eye disease, strokes, and heart attacks.

Cinnamon has been proven effective for menstrual cramps, infertility and against h. pylori bacteria. It can also reduce pain associated with arthritis and help to regulate LDL cholesterol.

Honey is antibacterial, antifungal and can help prevent heart disease and reduce ulcers.

At just 80 calories per cup, blueberries are quite low in calories.Blueberries can reduce brain inflammation

They are also packed with antioxidants and can help to reduce brain inflammation.

They, in fact, are ranked the highest of any fruit in free radical fighting antioxidants. Native Americans have even used this little powerhouse to fight coughs.  They also added blueberries to stews and soups and, once dried and crushed, as a preservative for meat.

  3. I love blueberries and use them fresh on cereal and in desserts when they are in season. I think I’d need to double this if I were to try it. Then I could freeze some for later. Most muffin recipes are full of things I’m not supposed to eat, but these do look healthy.
