Baked Apple Delight with Coconut Whipped Cream

You may enjoy the baked apples as a compote served on top of your hot breakfast cereal. It is also delightful with chopped raw walnuts as a topping.

Baked Apple Delight with Coconut Whipped Cream

Description

The “Delight” of the “Baked Apple Delight” comes from the multitasking beauty that allows it to go from breakfast to snack to dessert and, of course, there is that whole healthy, yummy goodness thing.

 

Scale

Ingredients

  • 2 lb baking apples, any kind
  • 1 lb pears* 
  • 1 lb frozen** pitted cherries
  • 1/4 c. raisins
  • cinnamon, nutmeg or pumpkin pie spice, to taste

Instructions

  1. Preheat oven to 400F.
  2. Core and cut the apples and pears into bite-size chunks.
  3. Cut the cherries in half.
  4. Place all in a large baking dish.
  5. Cover dish and bake for about one hour, or until all fruits have softened.
  6. Remove from oven.

Notes

*Pears are optional. You can just as easily use all apples.
 
**The cherries in their frozen state release delicious liquids as they defrost. This will also lend a lovely color to the dish.

  3. I rarely eat sweets but oh Elise this looks marvelous! I can hardly wait to give it a try, in fact I’m going to make a quick run the the grocery to get these ingredients and serve this for New Year dinner – hummm, wonder how it’ll go with black eye peas, ham hocks, fried okra and cornbread?   7. This looks absolutely delicious. I can’t wait to try it. I just ran out of cherries but they’re going back on the grocery list. Does it matter which pears? I enjoy all kinds but love the Asian ones best. I think it’s their crunchiness that gets me every time. Yum!
